Baked Carrot Crispies
Ingredients:
- 2 Carrots, Shredded
- 1 Apple, Shredded
- 1/3 Cup Molasses
- 1/4 Cup Bran
- 1/2 Cup Brown Sugar
- 1/2 Cup Water
- 1/2 Cup Flour
- 1/4 Cup Dry Oatmeal
- Confectionery Sugar
- Preheat oven to 400 degrees
- Generously grease a muffin tin.
- Mix carrots and apples in a bowl with molasses, bran, brown sugar, water, flour and oatmeal.
- Mixture should have a thick and doughy consistency. Add more bran if needed. Scoop dough into muffin tin, sprinkle top with brown sugar and bake in the oven for 30 to 50 minutes until cooked thoroughly.
Let cool. Garnish with a light dusting of confectionary sugar. Makes 6 muffins.
